Who We Are

We love the Hudson Valley and are so excited to see the food and beverage scene flourishing. The Dry Fly Coffee Company is our answer, with sustainably and ethically sourced coffees roasted on our state of the art, zero emissions roaster. Our coffees are great at home or at basecamp but pair beautifully with our naturally leavened breads and pastries served in our solar powered, LEED certified shop in New Paltz. In addition to our baked goods, we carefully curate and serve a selection of the best artisanal products made in our community.

We meticulously source, roast and brew coffees for people looking for something better to start their mornings. We strive to allow the flavors developed by skillful coffee farmers and processors to shine in the cup. We take the same care sourcing grains for our breads and all our provisions, searching for like-minded artisans, working to perfect their craft.

Meet Noah

Roaster and owner, Noah Michaels, is a New Paltz resident with a deep love of the Hudson Valley has dedicated his life to making things that taste great. From French classics to a better tasting potato chip, he believes great food should be available to everyone. He has built his shop and curated his coffee and bread offerings to create a new source of community for all Hudson Valley residents.

Our Inspirations

My grandfather loved taking me on fishing trips when I was a little kid. While I loved the fishing, getting up early was a challenge but he opened my eyes to the beauty of watching the sun come up and the clarity that awaits those who rise early. Now, the early morning is my “A time” and while I don’t do too much fishing anymore, I love getting up early and having the full day ahead. Now it’s mostly early morning walks with my dog, Werther, along the Rail Trail. It was one of those early mornings that gave me the inspiration for this shop. I thought why should New Paltz be without a specialty coffee roaster, open early enough for dog walkers and those other early risers who make the world go round? My wife, Margaret, a constant companion of Werther’s, and an avid coffee lover could not agree more.

So, do you fish?

Not so much anymore. My grandfather and I used to fish a lot. I think it was when he was at his happiest and we named our shop Dry Fly partly as a tribute to him. The other reason we chose this name is that Dry Fly Fishing represents balance with one’s surroundings and the environment which are pillars of our business. Finally, Dry Fly Fisherwomen are up before dawn, quietly practicing their craft, just like our bakers and baristas.

Why is your coffee more expensive than the Grocery Store?

We buy the highest quality coffees possible and don’t hide behind dark roasts to obfuscate the beans natural qualities. We seek to pay fair wages to everyone along the coffee value chain, from the farmers to our roasters and baristas. We publish our purchase prices so you can feel confident we’re paying our farmers and producers fair wages.

What do you mean by Zero Emissions?

And why does your roaster look so strange? We use a Bellwether Coffee Roaster in our shop. It’s an electric roaster which we power using the many solar panels you’ll see when you visit and is designed for maximum energy efficiency and quality. It uses condensate capture to prevent volatile organic compounds (V.O.C.s) from being released into the air during roasting and it looks pretty cool too.  Come by and watch us roast some coffee and we can tell you more.

Do you have Gluten Free Items?

Yes, we try to make some of our cakes and pastries gluten free for our customers and will mark them clearly on our menus BUT our bakery regularly handles gluten containing ingredients. This means our gluten free items could contain trace amounts of gluten, so while we feel confident that most customers will be satisfied by these items, any true Celiacs should avoid our baked items.

How long do coffee beans stay fresh?

Once coffee is roasted, is starts to lose its quality after a few days. This quality loss can be slowed by keeping coffee away from light and air and that’s why we invest in our special packaging as opposed to any kind of bulk or co-op packaging. Our packaging is made of 60% biodegradable materials, and we hope to transition to 100% biodegradable once it is available.

So, where can I park?

Zer0Place (the building we’re located in) has a parking lot on its north side with parking.  It also has plenty of EV charging available.  From there there’s a walkway to Dry Fly Coffee.  Additionally, there’s street parking on North Chestnut Street if the lot is full.  Finally, there’s handicapped accessible parking right in front of the Mullberry Street Park which is along side of Dry Fly Coffee.
