This washed Colombian is from the Gaitania village of Planadas, Tolima. Ripe cherries are de-pulped and then dry fermented for 60 hours, thoroughly washed in the fermentation tank, and then dried for 15 days. This coffee is sweet and structured with a stonefruit backbone and can be enjoyed with or without milk.
