This washed Colombian is from smallholder farms in southern Huila. Ripe cherries are de-pulped and then dry fermented for 24-40 hours, thoroughly washed in the fermentation tank, and then dried on patios. This coffee is sweet and structured with jammy, grape notes and a sweet lingering backbone.
